Try this pan when having a few friends for tasty mussels and clams. Serves up to 7 servings As paella and tapas identifies with Spain, the same holds true for the Portugese Cataplana. The name is both for the recipe and the vessel in which you cook it. A cataplana basically works on the same principle as the modern pressure cooker (but without the safety valve). This is a broad domed shaped dish, much like two woks placed together which is traditionally made of copper and lined with tin. The food is placed in the bottom half of the pan and then the hinged lid is closed enabling the ingredients to simmer together and the flavors to develop. The cataplana is used for a large number of Portugese dishes; especially those from Algarve (where the cataplana originated). Also, depending on the serving size, the cataplana comes in different sizes. The most famous of these dishes is called the "Ameijoas na Cataplana" or Clams with Sausage and tomatoes. However, almost anything can be cooked in a cataplana, including chicken, meat, fish and vegetables. It can be used in the oven but often is used on the stove-top. This product is made in Portugal
