When using this type of paella pan, it produces an excellent socarrat, a caramelized delicacy. If the Polished Steel is seasoned well and properly cared, it can last a lifetime. For best paella results, the Polished Steel Paella Pan should be used over a gas range. Not recommended for any other types of cooking ranges. Made in Spain
